Freeze… Put ‘Em Up… And Can It

It is getting to that point of the year to start thinking about putting food up.  Although we do like to put this off until slightly cooler weather it is nice to begin building freezing and canning into the flow of harvest and production now.  Freezing squash and beans, making sauces to freeze and can and throwing veggie in a pot to cook down veggie stock and soup bases now for freezing can start to become a weekend activity.  Finding that balance where putting up food can happen in a relaxed flow while not being a futile or overwhelming effort is key.  If it is either futile or overwhelming it is a very frustrating process but if built into the flow in a balanced way it can be a very rewarding way to enjoy the fruits of the summer through the winter.

It is nice to save some of this work until later with sequential and later plantings.  The weeds will slow, the planting and sowing is over or significantly slowed and the weather/ heat doesn’t zap energy so much.  However,  there are a lot of exciting fall foods on the way so getting started early to some degree is nice.  Cabbage krauts and kimchi, fall root veggie ferments, apple sauce, and butter nut, sweet potato and winter squash soups and veggie bases are all still to come.  Relaxing into the process of year round food production is so satisfying and finding a group of friends to gather together and crank out large batches at a time can be a really fun and yummy party.  Many hands make light work, lots of laughs, great meals and continued garden abundance enjoyment.

In the store the vendors of Peddlers’ Produce have a great selection.  Elkhorn Fresh Farm has beautiful fresh garlic pulled just this past week.  Fuzzy Face Farm has a wonderful selection of beautiful squash, zucchini and sweet Walla Walla Onions.  These guys’ produce is well done and a true blessing to have available.

Peddlers’ Produce has a $25 weekly variety box available.  This box is similar to the CSA share without the commitment to 20 weeks.  It is a great way to get the benefit of the variety and seasonal produce while fitting it into your busy life as you are able.  Check out our product description here.  We have plenty of recipes and suggestions for how to use the items in each box.  It is great whether you have a potluck to prepare for, or you want to add some local produce to your everyday meals.  Sign up for our newsletter and we will be able to send you a list of everything in your box and accompanying recipes and preparation ideas to go along with your produce.  Last week our boxes included items such as chard, potatoes, beets, purple top turnips, parsley, basil, oregano, green beans and tomatoes. This week we also have options such as carrots, zucchinis and summer squashes onions and garlic.  If there is something you see in our store’s vegetable selection that you want to make sure makes it to your box let us know.  We will work to make sure you get what you want.  See our pintrest page for some links to recipe ideas.

We are excited to have local beekeeper, Fritz’s Apiary honey, in our store.  Check out our vendors page and Fritz’s Apiary to see Fritz’s honey for only $10/lb.  Add it to your veggie box or order by itself.  Fritz has been beekeeping for 20 years and loves his bees, this is apparent in the taste and quality of the honey.

We are pleased to be working with Fuzzy Face Farm.  This is a groundbreaking farm, literally.  These guys just rolled into town from Vermont this past winter and have wasted no time.  They are ambitious and breaking ground and really getting going at their beautiful ridge top  farm.  Visit their Facebook page here and vendor page to find out more about their products and vision.  It is really great.  We look forward to being able to host their products soon.
